- Freezer temperatures satisfactory.
- 100 ppm chlorine sanitizing solution available.
- Dishwasher reaching > 71 C at plate level. Purchase a dishwasher cutlery rack.
- Hand sink stocked with liquid soap and paper towels.
- thermometers available. Monitor and record temperatures of coolers, freezers and hot holding units daily. Monitor and record dishwasher temperature weekly.
Note : Use only reusable food grade container for food storage. Single use containers must be discarded after use (bulk food product buckets or plastic containers).
