Observation (CORRECTED DURING INSPECTION): Dishes are run through dishwasher and minimum 71C required for sanitizing not achieved.
Corrective Action(s): Dishes are permitted to be temporarily manually washed and sanitized today using the method described below.

Observation: Various foods not protected from contamination:
1. Scoops left in bulk food bins. Hands touch the scoops and contaminate the foods within.
2. Some foods not covered in walk-in cooler. Uncovered foods may be exposed to contamination e.g. foods above, dust
3. Ice machine showing some build-up of mould/mildew, especially in internal compartments. Mould/mildew may contaminate the ice
Corrective Action(s): 1. Scoops must be immediately washed and sanitized and stored outside of bins.
2. Cover all foods in walk-in coolers. Ensure foods are stored at least 6" off the ground
3. Clean and sanitize the ice machine immediately.

Observation: High-temperature dishwasher operating at maximum 67 degrees Celsius at the plate level upon final rinse cycle. Rinse cycle dial displaying 81C (incorrect). Dishwasher must achieve 71C at the plate level upon final rinse cycle (min/max waterproof thermometer) in order to achieve sanitization.
Corrective Action(s): Repair dishwasher immediately. Repair techician has been called and is current looking at the machine. Manual warewashing is temporarily permitted for today (August 29, 2019):
1. Spray dishes
2. Run through dishwasher (detergent + rinse aid)
3. Soak dishes in 100 ppm bleach in 2-compartment sink
4. Air dry dishes
**Correct by: August 30, 2019. If dishwasher not repaired by tomorrow, a closure order will be issued**
