Routine check (after lunch). Licensed Care Facility (child care) for about 60 children.
Providing lunches and snacks, including hot meals.
Cooler today is keeping food at 4C (40F) or colder (air temperature varies; food temperature below 4C).
Thermometer available in fridge compartment appears to be accurate.
Daily fridge temperature records are kept.
Hot food - soups, turkey, etc. - cooked to 74C (165F) or hotter (keep records as well).
NSF probe thermometer available for checking food temperatures - good. Thermometer is clean and sanitized before use.
Freezers (one large and one small) are at -18C or colder - good.
Hand washing sink has hot/cold water, liquid soap, and paper towels in dispenser.
Non-latex disposable gloves also available.
Staff on site today (2) with valid Food Safe Level 1 certificates - good. Expiry dates are checked (renew before expiry date).
Food safety plans available.
Food storage / organization - good.
Chlorine sanitizer in labelled spray bottle - used for sanitizing counters, sinks, etc.
Chlorine test strips are available (100ppm minimum and make fresh daily).
Poster posted with sanitizer options and concentrations/dilutions.
Commercial low temperature dishwasher has a wash water temperature of about 120F - good.
Final chlorine sanitizing rinse is at 50ppm and verified with a chlorine test strip - good. Keep records for daily checks.
Cleaning - good.
A routine cleaning schedule for cleaning cupboards is being followed.
Premises well contructed and maintained. No obvious signs of pests.
