Observation (CORRECTED DURING INSPECTION): Knife on magnetic knife holder was in poor sanitary condition at time of inspection, with vegetable debris over it.
Corrective Action(s): Knives must be fully cleaned and sanitized prior to placing them on the magnetic knife holder. This is essential to ensure that any bacteria or viruses that could cause foodborne illness are eliminated on food contact surfaces.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Approximately 25 cans in the establishment were found to have significant dents along the double-seam seal at the top and bottom of the cans. Some cans have multiple dents.
2. Pallet of vegetables observed directly on the floor of the walk-in cooler.
Corrective Action(s): 1. Cans were all discarded at time of inspection by the assistant general manager. Staff to be reminded to conduct regular inspections of cans and routinely monitor their integrity.
2. Pallet was elevated 6" off the floor. Assistant manager has reminded all staff members to ensure that pallets are elevated at a minimum of 6" to protect food from contamination.

Observation: Various areas of the food store are in poor sanitary condition and require additional cleaning:
1. In the fruit / vegetable cutting area underneath the shelving, including the presence of old rodent droppings in crevices
2. In the produce walk-in cooler along the walls
3. Areas underneath the shelving of the dairy cooler have spilled milk residues.
Corrective Action(s): Thoroughly clean the aforementioned areas with your approved commercial-grade cleaner.

Comments

Routine inspection conducted of the food store. The following observations were made:

1. Temperatures
Store aisle stand-up freezers, display freezers, walk-in freezers were all maintained at -18C or less
Display coolers maintained at 4C or less throughout the store
Produce walk-in cooler at 4C
Vegetable display cooler at 4-5C
Temperature logs generally well maintained and up-to-date

2. Hygiene and Sanitizing
Hand wash stations in food preparation areas adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
Sanitizer dispenser releases approximately 200 ppm QUATS in both the general dispensation area by the mop sink and by the 3-compartment sink, test strips present
Spray bottle contains approximately 200 ppm QUATS, two spray bottles no longer had sanitizer - however no further food preparation was scheduled for the day. Ensure that staff members routinely check sanitizer concentrations prior to usage on food contact surfaces
Employee restroom well maintained

3. Storage
Chemicals stored separately from all food products and food preparation areas
Bulk storage bins were in good sanitary condition. Remind staff members to frequently check scoops and place them in the bakery potwasher when they are soiled
Organization of walk-in cooler generally satisfactory

4. Pest Management
Professional pest control company conducts routine audits
Back entranceways and receiving areas generally well maintained. No gaps underneath receiving doors noted.

5. Please note the following:
A bag of chips (opened and folded up) was observed inside a cabinet at the back of the produce preparation area. Please remind staff that eating is not permitted at any time inside food preparation areas
