Observation (CORRECTED DURING INSPECTION): Temperature logs had much lower cooking temperatures recorded than the required 185 degF (85 degC). The log had cooking temperatures recorded in the low 70's Fahrenheit. Even if staff put F instead of C, these temperatures are too low. Chicken is not being cooked adequately. THIS IS A SERIOUS CONCERN AS IT CAN LEAD TO FOODBORNE ILLNESS OUTBREAKS!
Corrective Action(s): All chicken (whole and pieces) MUST be cooked to at least 185 degF (85 degC) as per your FSP. Take the chicken from the warmers and reheat to 185F (85C) before storing in the warmer. Educate all staff on the proper cooking temperatures. Once the chicken is cooked to 85 degC, it can be stored in the hotholding unit at 60 degC or above.

Supervisor on duty had FS level 1 certification.
A Pest control is on contract. FOLLOW RECOMMENDATIONS OF THE PEST CONTROL COMPANY.
