301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1. Ice machine had visible grime/mildew like spots inside it that could cause potential contamination of ice stored in it.
2. Large prep cooler in the back kitchen has spill and build up of curries and gravies inside it.
Corrective Action(s): Ensure that all equipment/utensils and food contact surfaces are maintained in good sanitary condition:
1.Remove all the ice from the ice machine and clean and sanitize the inner walls of ice machine. Have a regular cleaning schedule for ice machine.
2. Clean and sanitize the prep cooler.

Observation (CORRECTED DURING INSPECTION): Both liquid soap dispenser and paper towel dispenser were empty. Staff restocked both dispensers during inspection.
Corrective Action(s): To ensure adequate handwashing and to prevent the risk of food contamination, ensure that all handwash sink are provided with supply of hot and cold running water, liquid soap and single use paper towels.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Onion bags in the dry storage room was stored directly on the floor.
2. Scoop was stored inside the ice machine. Staff removed the scoop at the time of inspection.
3. Multiple food containers stored in walk in cooler were left uncovered that could increase the risk of potential food contamination.
4. In one of the prep cooler, topping inserts were stacked on top of one another. Please note that the underneath of a container can cause potential food contamination if stored directly on food. In addition to that, adequate cold air circulation within the prep cooler may not be achieved and potentially hazardous food can be left above 4C.
Corrective Action(s): To prevent risk of potential food contamination,
1. Always store food products at least 6inches off the floor.
2. Store scoops outside the ice machine and bins in a sanitary manner.
3. Properly cover all the food containers with lids and/or food grade materials.
4. Do not stack food inserts on top of one another in PREP COOLER.

Observation: 1. Thick build up of grease observed on vents. Manager stated that the vents are scheduled for service this week.
2. Food spatter observed on cooking equipment and behind cooking line.
3. Dry storage room was found cluttered and un-organized.
Corrective Action(s): - Ensure that regular cleaning is conducted and facility is maintained in good sanitary condition.
- Organize the dry storage room.

Routine inspection conducted.

Observations:
- Temperature of walk in cooler noted at 3C.
- 3x prep coolers below 4C.
- 1 stand up cooler at 3C.
- Freezers noted at -18C or lower.
- Handwash sink available. See violation above.
- High temp mechanical dishwasher reached 73C on dish surface during rinse cycle.
- 2 compartment dishwashing sink maintained in good sanitary condition.
- 200ppm QUATS present in spray bottle.
- Pest issues have been improved. No signs of pest activity observed.
- New shelving units have been installed.
- Kitchen manager has valid FOODSAFE Level 1 equivalent.
