Observation (CORRECTED DURING INSPECTION): Insert of sliced onions at the front cooler contained a dead fruit fly. The insert was not properly covered with a lid.
Corrective Action(s): Discard the insert of sliced onions. Ensure all food is protected from sources of contamination.

Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher is unable to sanitize properly.
Corrective Action(s): Manual sanitizing of dishes and utensils is temporarily permitted.
1. Clean and sanitize one of the sinks adjacent to the dishwasher.
2. Prepare Quat sanitizer in this sink as per manufacturer's instructions
3. Wash and rinse all dishes and utensils in the dishwasher
4. Afterwards, submerge them in the Quat sanitizer for minimum 1 minute
5. Allow them to air dry before using
6. Prepare the Quat sanitizer fresh every 2 hours
