Observation (CORRECTED DURING INSPECTION): Cheese, ham and feta cheese 8C to 10C
Corrective Action(s): All potentially hazardous foods over 4C for greater than two hours to be discarded.
Do not leave potentially hazardous foods on the counter. If employees have to leave the task they are doing with this food they must put all potentially hazardous foods back in the refrigerator until they can return.
Make sure that bulk foods are portioned so that they minimum amount needed is taken out to minimize the risk of pathogen growth and reduce temperature abuse of the bulk container.

Observation: Dirty apron thrown on prep table when employee removed in order to help at the front counter.
Fruit fly infestation.
Corrective Action(s): Staff must be properly trained in food safety and cross contamination - do not put dirty aprons on the prep table. If apron must be removed it should be placed in the dirty laundry container and a clean one put one when the employee returns to work.
NOTE: Aprons should be changed whenever they become dirty and after each break.
Integrated pest management plan to be implemented to eliminated fruit fly infestation.

Corrective Action(s): Integrated pest management plan to be implemented, which should include frequent removal of all garbage, whether the waste container is full or not, cleaning of all surfaces and low traffic areas, under and behind equipment.

Observation: Food debris in all drawers in front service area, encrusted food/grease on shelving units and equipment, and food splatters on walls, mould in proofer.
