Comments

-Walk-in cooler was at 3C.
-Walk-in freezer was at -17C.
-Prep cooler was at 4C (bottom). Top inserts were not being used at the time of inspection.
-Cafeteria line cooler are used to store low and non-potentially hazardous foods during the lunch rush. Cooler units are scheduled to be replaced this school year.
-Upright freezer was at -10C.
-Hot holding was greater than 60C. Foods were cooked to greater then 74C prior to hot holding.
-Temperatures are checked and recorded daily.
-High temperature dishwasher had a final rinse of 74C on the dish surface during the final rinse (minimum of 71C required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Ensure to reinforce hand hygiene practices with students.
-Quats sanitizing solution was tested at 200ppm.
-Slicer cleaned and sanitized by instructors at the end of the day. Equipment was found to be clean and sanitary.
-Ice machine was found to be clean and sanitary.
-Minor pest activity noted at the time of inspection. Pest issues have improved since the previous inspections. Continue to monitor for pest activity and contact the pest control operator as needed.
-FOODSAFE Level 1 valid until January 30, 2028.
