Observation (CORRECTED DURING INSPECTION): Observed staff skipping sanitizing step after washing and rinsing step. After rinsing, staff put cleaned cover onto a drying rack. Edcuation provided that all manual ware washing must include sanitizing step.
Corrective Action(s): Required operator to plug the sanitizing sink, fill it up with QUAT sanitizer and submerge them for 30 seconds after rinsing. Staff could not find the sink plug for sanitizing sink. Required operator to use the washing sink as there is a plug for that sink. Ensure to get a sink plug for all sinks available for use.

Observation: Observed droppings in the corner wall where the electrical panels are and along the wall behind/below dry storage racks. Premises have a contract with a pest management company but no reports are provided. Staff indicated that she did not see any rodents.
Corrective Action(s): Required operator to remove the droppings (ensure to wet them with sanitizer prior to removing them), then clean and sanitize the area. Regular cleaning/monitoring is required to confirm whether there is an active infestation.
