-Walk-in cooler was at 4C. -Walk-in freezer was at -18C. -Sandwich prep cooler was at 4C (top and bottom). -Under counter cooler was at 4C. -Counter top cooler was at 4C. -Cream dispensers were both at 4C. -Eggs for the egg cooking station stored in the walk-in cooler. -Hot holding was greater than 60C. Foods were cooked to greater than 74C prior to hot holding. -Temperatures checked and recorded daily. -High temperature dishwasher had a final rinse temperature of 71C on the dish surface (minimum of 71C required for proper sanitizing). -Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. -Quats sanitizer dispenser was at 200ppm. Containers time stamped and changed every 2 hours -Mixing spoons stored on ice/water mixture. -Ice Capp wand sanitized with 200ppm Quats sanitizer after each use. -General food storage practices good at the time of inspection. Foods off the ground and protected from potential contamination. -Facility serviced by a professional pest control operator on a monthly basis. Recent reports indicate minor fruit fly activity; no rodent activity. -No signs of pests noted at the time of inspection. -Washroom clean and sanitary.
