Observation: Live roaches noted under dishwasher; one adult and several nymphs. Sticky traps in storage room had multiple dead insects; traps have been in place for several months so not clear how long insects have been dead. Replace traps. Use roach-specific traps. Install monitoring traps around dishwasher. Place food-grade gel bait in all areas with activity.

Observation: Grout requires replacing in several areas of kitchen. Grout is deeply worn, hard to clean, and retains moisture and food debris which will make the pest infestation hard to eliminate. Re-grout.

Observation: Overall sanitation is ok but corners under and behind equipment requires a good scrubbing. Most grout lines on tile floor also require scraping.

Comments

Fridges are all <4 Celsius. Hot holding > 60 Celsius. Dishwasher reached 74.9 Celsius at plate level as per min/max thermometer. Glasswasher had 25 ppm iodine. Hand sinks were all working and stocked.
