Routine inspection conducted:

- Coolers at 4 degrees C or less (deli area coolers, store floor coolers near deli, and back storage walk in coolers)
- Freezers at -16 to -17 degrees C (deli area and back storage walk in freezers)
- Hot holding internal temperatures at 60 degrees C or more
- Food is properly organized and protected from contamination
- Wiping cloths immersed in quaternary ammonium compounds (quats) sanitizer available at 200 ppm. Quats also available at 200 ppm in a labeled spray bottle and in third compartment of manual ware washing sinks.
- High temperature dishwasher measured 76 degrees C at utensil surface during final rinse (minimum 71 degrees C)
- Timers are in use for in-use equipment/utensils (four hours). Deli slicers are disassembled before being cleaned and sanitized. Note: Sanitizer solution should also be located within easy access to sandwich prep station. Currently sanitizer solution is located at far end of deli near slicers. Sanitizer solution prepared at time of inspection for sandwich prep station (200 ppm quats).
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Proper glove use and hand washing was observed.
- No signs of pest activity observed.
- Daily temperature and sanitation logs are maintained
- Probe thermometer calibration checks are performed weekly
