**Glasswasher at 200ppm chlorine in final rinse. This is excessive and approx 75ppm would be ideal.
**Ensure the actual data is recorded in the log for the glasswasher as opposed to an "initial".
Main dishwasher at approx 70ppm chlorine in final rinse. Wash water at 129F. Soap dispensed into wash cycle.
Ice machine is clean
Line coolers observed being much better maintained.
All line coolers cold holding at <4c
Wiping cloths observed being stored in quat sanitizer when not in use.
Quat sanitizer tested at 200ppm.
