Handsinks were supplied with liquid soap, hot and cold running water, and single-use paper towels.
Walk-in-cooler and other refrigeration units containing cold potentially hazardous food were at 4 degrees C or less.
Front beverage cooler was above 4 degrees C and is used to contain non-potentially hazardous beverages (pop and water bottles) only. Yogurt and milk are stored in other coolers at 4 degrees C or less.
Walk-in-freezer was at -16 degrees C at the time of inspection (required: -18 degrees C or less).
Hot-held food was at least 60 degrees C.
Time-tracking documentation was electronically maintained up to 8 hours maximum at ambient temperature for the herb and garlic and jalapeno savoury pastries in accordance with the corporate food safety plan.
Dishwasher final rinse temperature was at least 71 degrees C (measured at 86 degrees C) at the plate level.
Dishwasher final rinse temperature was at least 180 degrees F for at least 10 seconds at the manifold level.
3-compartment sink was supplied with hot and cold running water. Three sink pugs were available.
200 ppm Quaternary ammonium compounds (QUATS) sanitizer was available inside the sanitizer pails and dispenser at the 3-compartment sink.
QUATS test strips (to monitor the concentration of surface sanitizer) and chlorine test strips (to monitor the concentration of the vegetable chemical wash) were available.
Ice machine and ice bin were in a clean condition.
Vegetable chopper and slicer were in a clean condition.
No signs of cockroach or rodent activity were evident at the time of inspection.
Note: Minor fly activity was evident and fly glue strips were in use. Monitor for pest activity and continue with pest control measures.
