Comments

Meat slicer has been cleaned.
Organization of foods in walk in cooler has improved. Discussed with operator that raw whole eggs also need to be stored below vegetables and ready to eat foods.
All newspaper have been removed from the kitchen and food storage areas.
Bean sprouts are kept in ice at 4 degrees Celsius or less.

Discussed with operator about obtaining a 'back flow' preventer that can be screwed onto the faucet of the utility sink beside the cooking area. A back flow preventer helps to prevent cross contamination of the water supply when a hose is attached to the faucet for filling up pots with water.
