Observation (CORRECTED DURING INSPECTION): Facility lacked sanitizer upon arrival of EHO in main kitchen area. Sanitizer bottles hung empty in dishpit and none found in food preparation area. Facility is continuing to use green detergent buckets for surface wiping. This is acceptable PROVIDED that surfaces are routinely sanitized afterwards. This is currently not occuring.
CORRECTED DURING INSPECTION - sanitizer bottles all filled.

Corrective Action(s): Ensure sanitizer solution is ALWAYS availble for staff use in both bar and kitchen area prior to the start of food production.

Observation: 1) Bottom of glass cooler has broken glass under glasses. Layer of shelving between glasses and bottom in case of breakage.
2) Raw hamburger meat found above ready to eat salad mixture.

Corrective Action(s): 1) Have area cleaned and sanitized. Remove broken glass. Ensure area is routinely cleaned of glass debris.
2) Ensure staff are storing raw meat below ready to eat food items.

Observation: Glass washer broken. Pump or drain issue. Unable to test glasswasher during inspection.

NOTE: Sanitizer solution issue is repeated violation. Ensure this issue is solved IMMEDIATELY. EHO to return Friday to determine if facility is ensuring proper sanitizing of surfaces is occurring.
