Observation (CORRECTED DURING INSPECTION): Rice cakes were stored out at room temperature.
Corrective Action(s): Rice cakes must be stored inside the cooler at all times. If you believe they're shelf-stable, provide lab results with a pH and Water Activity (Aw) test for the rice cakes. Submit the results to me.

Observation: The freezer in the prep area is at -1 degC. It has ice buildup along the side and base of the inserts.
Corrective Action(s): Freezers must maintain a temperature of -18 degC or below. De-ice the unit and get it fixed.

Observation: Temperature logs are not being maintained for the coolers.

Observation: The pull-out drawer cooler is not maintaining a temperature of 4 degC of below. Temperatur ranges from 6 degC to 12 degC. This is not acceptable.
Corrective Action(s): Get the cooler fixed. All dairy products moved to another cooler. Don't store PHF's in this cooler until it's fixed.

Observation: The paper towel dispenser at the front sink has fallen off.

-Dishwasher has 50ppm chlorine
-Washroom and back handsinks are fully equipped. DO NOT BLOCK ACCESS TO THE HANDSINKS (DON'T STORE ANY ITEMS IN FRONT OF SOAP DISPENSER).
-Other coolers are below 4 degC; other freezers are below -18 degC. Another freezer has been added to the dry storage room.
-Some food items from Arisu are being stored at this location (okay).
