Observation (CORRECTED DURING INSPECTION): 1. cut vegetables in large quantity tested at 14.1C, left in room temperature
2. egg batter tested at 10.1C left at room temperature.
All potentially hazardous food must be kept at <4C. Operator indicated that they were taken out of working walk in cooler, approx. 1 hour ago. Operator moved the listed items into walk in cooler.

Observation (CORRECTED DURING INSPECTION): 1. sanitizer buckets not available on site
2. dishwasher does not dispense any sanitation levels

1. Bucket sanitizer must always be available at >100ppm of chlorine to sanitize food contact surfaces. Operator made bleach sanitizers tested at >100ppm
2.Low temperature dishwasher must dispense >50 ppm of chlorine to achieve sanitation. In the meantime, dishwasher will only be used for wash and rinising of dishes. Manual sanitation must be performed for all dishes. Operator able to show ability to manually sanitize all dishes.
