Observation (CORRECTED DURING INSPECTION): Front under counter cooler was measured at an ambient temperature of 7 degrees C. Internal temperature of probed food at 6 degrees C.
Corrective Action(s): Potentially hazardous items (dairy, poke prepared today) transferred to a cooler at 4 degrees C or less. Ensure that all cold potentially hazardous foods are maintained at 4 degrees C or less to limit the growth of potential pathogens and/or toxins, which may not be destroyed by reheating.

Observation (CORRECTED DURING INSPECTION): Scoops with rice and raw tuna debris were observed stored at ambient temperatures.
Corrective Action(s): Scoops were washed and sanitized, then placed into an ice water bath. Ensure that in-use utensils are stored in a manner that limits the growth of potential pathogens and/or toxins. An ice water bath may be used. Ensure that ice water is changed as needed to maintain temperatures of 4 degrees C or less.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. No detectable quats or chlorine sanitizer was present in only spray bottle on site labeled "sanitizer."
2. Soiled wiping cloths observed on counter tops.
Corrective Action(s): Quats (quaternary ammonium compounds) sanitizer was refilled at the dispenser and tested at 200 ppm.
Quats sanitizer was prepared in buckets at 200 ppm for the front and back areas. Wiping cloths stored in buckets.
Ensure that at all times, sanitizer is available in food preparation areas at the correct concentration (200 ppm quats) for effective sanitizing of food contact surfaces. If wiping cloths are used, they are to be stored in the sanitizer solution when not in use. It is advisable to obtain test strips to verify sanitizer concentrations.

Observation: 1. A bag of rice was observed stored on the floor. *CORRECTED*
2. Open bags of food product observed in dry storage.
3. Hand washing sink is located immediately adjacent to prep cooler. Water from hand washing may potentially splash onto food and/or food contact surfaces.
Corrective Action(s): 1. Bag of rice was removed from the floor--thank you. Store food items off the floor to limit potential contamination and to facilitate cleaning of floors.
2. Ensure that once opened, food products are transferred to appropriate pest proof containers to protect food from potential contamination.
3. Ensure that a barrier is in place (i.e. a splash guard) to limit hand washing water from potentially contaminating food and/or food contact surfaces.

Observation: 1. Front prep cooler unable to maintain temperatures of 4 degrees C or less.
2. Back hand washing sink counter which was previously attached to wall has separated from the wall.
Corrective Action(s): Repair or adjust cooler to maintain 4 degrees C or less. Ensure that potentially hazardous foods are not stored here until such time. Ensure that back hand washing sink counter is in good repair. Date to be corrected by: June 29, 2018.

Observation: Glass reach in cooler (back area) lacks a thermometer.
Corrective Action(s): Ensure that a thermometer accurate to 1 degree C is provided for this cooler in order to verify temperatures. Date to be corrected by: July 4, 2018.

Routine inspection conducted:

- Coolers at 4 degrees C or less (exception: refer to code 205)
- Freezers at -13 to -15 degrees C
- Hot holding internal temperatures at 60 degrees C or more
- Hand washing stations supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- High temperature dishwasher measured 73 degrees C at the utensil surface (minimum 71 degrees C at the utensil surface)
- Ice machine in clean condition. Scoop stored safely.
- Washrooms maintained in clean condition. Sinks adequately supplied.
- Chemicals stored separately from food items.
- FOODSAFE requirements met at time of inspection
Notes:
1. As of July 29, 2013, all FOODSAFE Level 1 certificates issued in BC have a five year expiry date. FOODSAFE Level 1 certificates issued prior to July 29, 2013 are valid until July 29, 2018. Please visit foodsafe.ca for more information.
2. Sanitizer dispenser was observed to have air in the concentrate feed line. Ensure that when refilling sanitizer containers, no air is present in the concentrate feed line. This was noted on a previous inspection report.
3. No temperature records are being maintained. Discussed maintenance of temperature logs with owner.
