- Some salad dressing and frozen soup made at commercial kitchen ('The Yellow Deli' located very next to the bakery) were kept in display coolers at <4C - Handsink was maintained with hot & cold running water, liquid soap and paper towel - Manual dishwashing with 200ppm QUAT sanitizer - 20ppm QUAT sanitizer spray bottle available - No signs of pest activity noted at the time of inspection; however, keep a close watch at the back area and seal gaps to prevent pest entry > Deep cleaning under shelves throughout the facility is required.
