Observation (CORRECTED DURING INSPECTION): 3 buckets of quats sanitizer measured with a concentration of less than 50 ppm. Staff stated the buckets were switched out every 2 hours.
Corrective Action(s): Discard and refill all 3 buckets with 200 ppm quats sanitizer. Clean and sanitize preparation areas at front and back kitchen.

Routine inspection:
- Stand-up and prep coolers at 4C or less.
- Stand-up freezer at -18C.
- Hot food hot held above 60C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 3 compartment sink set up for manual dishwashing.
- High temperature dishwasher not in use. Rinse cycle temperature measured at 75C.
- Food stored off the ground.
- Vegetable slicer maintained in sanitary condition.
- General sanitation satisfactory.
- No pest activities observed at the time.
