Observation: Rodent droppings were found in the room adjacent to the staff washroom in the cutting area, back staff washroom, and upstairs in the storage area.
Corrective Action(s): Have professional pest control operator service facility and monitor for pest activity.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Rodent droppings observed in the upstairs storage area, back staff washroom, and room adjacent to the washroom in the main cutting area. Upstairs storage area also has a lot of clutter which can act as rodent harbourage areas.
Corrective Action(s): Clean and sanitize areas affected with rodent droppings using a sanitizing solution and wipe away droppings. Clean upstairs storage area and remove items not required for operations to eliminate pest harbourage areas. Cardboard boxes with droppings in them must be discarded.

Comments

-Front walk-in cooler was at 3C.
-Front large display cooler was at 4C.
-Front small display cooler was at 6C (defrost mode).
-Main cutting area walk-in cooler was at 4C.
-Main cutting area walk-in freezer was at -10C.
-Back area walk-in cooler was at 4C.
-Back area walk-in freezers ranged from -11C to -15C.
-Back chest freezers were less than -18C.
-Customer area freezers were at -14C.
-Temperatures are checked daily - infrared thermometer does not appear to be accurate - temperature fluctuate when taking a temperature of the same items in the walk-in cooler.
-Cleaning and sanitizing carried out in 3-compartment sink. Sink plugs available for sink.
-Quats sanitizer dispenser was tested at 200ppm.
-Quats sanitizer spray bottles labelled and tested at 200ppm. Front area had a bottle of bleach. Do not use both Quats and bleach sanitizer - will result in toxic gas production in the event of accidental mixing.
-Cutting boards are sanitized every 2 hours.
-Meat saw cleaned and sanitized every 2 hours and disassembled for cleaning at the end of the night.
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Foods properly stored off the floor and protected from potential contamination.
-Washrooms clean and well maintained.
*One severely dented can was found in the store area. The safety of canned items with severe dents cannot be verified - item was removed from the shelf.

A complaint was received from Delta Health Protection office regarding the transport of chicken meat in beef boxes and sausages being delivered without labels.
-Operator states boxes are reused to transport meats and a new liner is placed into the box. The original box is to be used to ship products which area cut.
-Operator has labels for ready-to-eat sausages and labels will be placed on the string to identify the product. Sausages are to be delivered in new boxes.
-Operator is not to store ready-to-eat foods in boxes used to store raw meats.
