Observation (CORRECTED DURING INSPECTION): - 0ppm chlorine residual detected on dishes after dishwasher cycle.
Corrective Action(s): - Container of chlorine sanitizer connected to machine was replaced with a new container. Once completed, residual detected on dish was 50ppm chlorine. Concentration of original solution which was connected had dissipated.
*Ensure chlorine residual on dishes is tested daily prior to operating dishwasher. This is critical to ensure dishes are being effectively sanitized.

Observation: - Grime, residue from leak, soiled cloths and miscellaneous debris present under rational ovens.
- Moisture has penetrated under the flooring causing flooring to buckle rendering surface no longer smooth and washable
Corrective Action(s): - Clean area under rational ovens removing all grime, residue and debris.
- Determine source of leak/moisture and repair. [Correction date: 15-Aug-2019]
- Repair/replace flooring so that it is in good repair (smooth, impervious) and capable of being washed. [Correction date: 8-Nov-2019]

- Reviewed cooling procedures with staff on duty. Noted rice cooling at ambient temperature at the time of the inspection. Temperature measured 40-47C. Staff reported it had recently been cooked (within 20 min). Ensure rice is cooled from 60C to 20C within 2 hours or less and then from 20C to 4C within 4 hours or less. Product was being stirred to facilitate cooling. *Obtain probe thermometer to monitor cooling temperature and ensure it adheres to above temperature/time requirements.
- Bleach sanitizer solution present. Concentration measured 100-200ppm chlorine
- No signs of pest activity noted. *Ensure floor area in hallways and storage area is kept clear to facilitate monitoring for pest and to ensure harbourage locations are not created.
- Staff on duty have completed Foodsafe level 1 training.

Note: Leak occurred from adjacent unit which affected seating area approx 1 month ago. Property Manager and restoration company have been involved. Initial assessment/remediation was completed. Additional repair/remediation is pending. Operator must ensure food service area and food is protected from any contamination during repairs. Repairs to be completed when business is in not operation.
