Observation (CORRECTED DURING INSPECTION):
Observed staff wiping their hands on their aprons, which was very stained, and not washing their hands after answering the phone and using the ordering screen. Bacteria can and love to grow on damp, warm materials (aprons, clothes) and surfaces with food debris.
Corrective Action(s):
Retrain staff on the proper and frequent washing of their hands. Staff SHALL wash hands when changing tasks; prior to handling food; and/or when their hands become soiled. Do NOT place the broom infront of the hand sink, as it makes it difficult/discourages staff from washing their hands.

Observation:
Staff used plastic cup to scoop ice from ice bin and then filled with pop. Staff could accidently touch the ice and contaminate it with bacteria, or the cup may chip and a piece of plastic will ball into the ice which a person could consume.
Corrective Action(s):
Remind all staff that an ice scoop (stored on top of the pop dispenser) shall be used to get ice out of the bin and placed into the cups.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
Food stains found on the sides and inbetween equipment, and on the walls below and behind tables and equipment. This will attract and harbor pests (flies).
Corrective Action(s):
Wash and sanitize these areas more frequently to remore food stains. Ensure these areas are being done on a regular schedule.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers were -18C or colder; hot holding units above 60C; and thermometers present.
- High temperature dishwasher rinse cycle had a temperature of 71.3C at the plate's surface as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in cloth bucket had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; labeled; date coded; food stored in groups with proteins separate or below RTE foods; and foods stored 6" off the floor on shelves or racks.
- No expired foods in use. FIFO rules being followed.
- Some drain/fruit flies found in the bar area. Clean and remove all food and pooling water. If these are present, the flies will breed in the conditions.
- General sanitation level is satisfactory, other then the mentioned areas.
- The window sill in the front, dough making area had adequate sanitation. Increase the frequency this area is cleaned in a day to prevent hardening of dough and flour, which makes it more difficult to clean.
- The interior surfaces of the ice machine were clean.
- All equipment was in good working order.
