Observation: *REPEATED VIOLATION*
Light in the walk-in freezer has been repaired. Inadeqaute lighting can increase the risk of cross-contamination of food stored in the freezer and sanitation issues.
Corrective Action(s): Ensure that the light in the walk-in freezer is fixed to provide well lit area during food handling/storage in the freezer.

Comments

Routine inspection conducted at the food processing unit and the following observations were made:

- At the time of inspection, the facility was not in operation and only operator's son was present for translation purpose. He stated that the facility operates every second day.
- Facility prepares and prepackages pork rinds and pork (pig) blood cakes.
- Walk-in cooler measured at 0C
- Walk in freezer at -9C
- Chest freezer was turned off and had no food stored in it.
- 3 compartment dishwashing sink available and used for manual dishwashing.
- 200ppm bleach solution available for sanitizing food contact surfaces.
- Hand wash sink available in the washroom and also at the mop sink. Both sinks had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- Single use containers stored in sanitary condition.
- All food contact surfaces were found clean.
- No grease/dirt build up observed on the vents.

Note: Multiple equipment are stored on the facility that are not intended for use during facility operation. Please store them offsite.

A follow up inspection will be conducted to ensure compliance. Please be advised that in case of non-compliance, enforcement action will be taken which may include correction/closure order, fines & violation tickets.
