Observation (CORRECTED DURING INSPECTION): - Cucumbers were being sliced directly onto drain board in dishwashing area.
- Supervisor reported surface was sanitized in advance; however, this is not a suitable area for food preparation.
Corrective Action(s): - Drainboard is not to be used for food preparation. Use designated food preparation table/surface for this purpose.
- Cucumbers were discarded by staff at time of the inspection.

Observation: - Small flies noted in dishwashing area.
Corrective Action(s): - Continue to maintain regular pest control service and follow all recommendations of pest control technician. Send most recent pest control report to EHO for review.
- Maintain a high level of sanitation and keep area clean and dry
- Change garbage frequently

Note: Fly light is present within area.

Observation: - Leak present from pipe under dishwashing sink.
Corrective Action(s): - Repair leak. To be corrected by: 08-Mar-2023
- In the interim, ensure container being used to collect water is emptied frequently. Moisture can attract and create a breeding ground for flies.

Comments

- Sanitation was satisfactory. Some attention is needed in hard to reach areas (edges of floor under shelving) to remove crumbs/debris.
- Handsinks were supplied with liquid soap and paper towel
- Coolers were operating at required temperatures (4C or colder) and freezer was maintaining products in a frozen state.
Temperatures checked:
- Walk-in cooler 2C
- Undercounter cooler (eggs) 4C
- Sandwich cooler top 3C bottom 2C
- Beverage cooler 2C
- Milk/cream dispensers 2C (drive thru) 3C (right service counter). Dispensers on left service counter not in use.
- Undercounter cooler (drive thru) 4C
- Walk-in freezer -15C
- Hot holding units were maintaining foods >60C
- Temperature monitoring in place with Zenput system. Supervisor showed that most recent readings were completed.
- High temperature dishwasher was operational and met required temperature to sanitize dishes. Temperature at dish surface measured 84.5C
- Quats sanitizer from dispenser at warewashing sink was 200ppm.
- In use wiping cloths kept in sani buckets of quats sanitizer (200ppm) at each station.
- Public washrooms were maintained and supplied with liquid soap and air dryers. Manager reports washrooms are checked every 30min.
- Foodsafe requirement met at the time of the inspection.
