Observation (CORRECTED DURING INSPECTION): High temperature dishwasher registered 65C at the plate level during the final rinse cycle. Atleast 71C is requried for proper sanitation of utensils and plates.
Corrective Action(s): The operator set up manually sanitation with 200 ppm quaternary ammonium in the 3 compartment sink. Dishes and utensils can be washed and rinsed with the dishwasher, but must be sanitized manually. Sanitize all utensils and plates before using them.

Observation: High temperature dishwasher registered 65C at the plate level during the final rinse cycle with an accurate thermometer. The temperature gauage indicated 82C.
Corrective Action(s): Service/fix the high temperature dishwasher to ensure atleast 71C is registered at the plate level during the final rinse cycle. Use an accurate thermometer with a heat cover to monitor the dishwasher temperature in the future. Correct by: Feb. 13, 2019

Routine inspection
- Prep cooler at 4C.
- Under the counter cooler at 4C.
- Double door cooler was not in service. No food items were stored inside.
- 2 walk in coolers at 4C.
- Single door freezer was functional.
- Walk in freezer at -20C.
- Soups hot held at 63C.
- Thermometers available in all the coolers and freezers.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm quaternary ammonium available in buckets and from the dispenser.
- Ice machine was in sanitary condition.
- Dry food products stored off the ground on shelving units.
- Temperature logs maintained and available for review.
- General sanitation satisfactory.
- No pest activities observed.
