306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
1) The exhaust canopy filters have accumulated grease on it, and the service sticker indicates that a professional cleaning was to be done in August 2019. Accumulation of grease will attract pests and is a fire hazard.
2) The legs of equipment, tables and storage racks have accumulated food and grease. This will attract pests.
Corrective Action(s):
1) Call a professional exhaust canopy cleaning company to clean the exhaust canopy and filters. You require to clean the filters yourself, between the professional cleanings.

2) Wash the legs of equipment, tables, and storage racks with hot water and soap. Ensure this is done every week to prevent build up.

Observation:
There are a number of burned out light bulbs in the kitchen area. The light level is low and it is difficult to see what areas need cleaning, and it is unsafe for staff to work in such low light.
Corrective Action(s):
Replace all broken light bulbs with working ones, to increase the light level.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers were -17C or colder; hot holding units 60C or hotter; and thermometers present.
- High temperature dishwasher had a rinse cycle temperature of 77.9C at the plate's surface, as per max/min thermometer.
- Bleach sanitizer in spray bottles had [Cl2] of 100ppm.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; labeled; stored in groups with proteins separate or below RTE foods; and food stored 6" off the floor.
- No expired foods in use or for sale. FIFO rules being followed.
- All items have been removed off the floor and stored on shelves or racks.
- General sanitation level is good, other than the mentioned areas.
- No signs of pests. Screen door installed on the back door, and catch-all-traps present to monitor or pests.
- Seal was replaced on the upright, white cooler. The door closes and seals tightly.
- Foil changed daily on the back splash of the range.
- FoodSafe certified staff present.
- Proper use of disposable gloves noted.
