No change in operation practices - all food items are pre-cooked and are re-heated in the oven just before serving.
Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
Cooler maintained at 2.6 degrees Celsius.
Freezer maintained at -19.3 degrees Celsius.
QUAT sanitizer in spray bottle = 200 ppm.
High temperature dishwasher sanitizing with 76.2 degrees Celsius at dish level after final rinse.
Overall food storage practices excellent.
- All foods covered and protected from contamination.
- All foods stored at least 6 inches off the floor.
- All food items organized in cold holding units and dry storage area.
