Observation (CORRECTED DURING INSPECTION): Dried food debris observed on the vegetable slicer stored on the rack near the walk-in cooler.
Corrective Action(s): Clean and sanitize the vegetable slicer. Ensure the slicer is taken apart during cleaning to properly clean the hard to reach areas.

Comments

Routine inspection:
- Walk-in cooler (beside the walk-in freezer) measured with an ambient air temperature of 7C. Only whole vegetables were stored inside.
- Other coolers (glass-door, walk-in) maintained at 4C or less.
- Freezers (chest, walk-in) were functional. Walk-in freezer's door had been replaced and working properly.
- Hot holding units not in use at the time of inspection.
- 200 ppm bleach sanitizer available in spray bottles.
- High temperature dishwasher registered 76C at the plate level.
- Ice machine maintained in a sanitary condition.
- Food items stored off the ground and covered.
- Permit is posted at a visible location.
- General sanitation satisfactory.
- No pest activities observed at the time of the inspection.
- Email a copy of operator's FOODSAFE certificate to the Environmental Health Officer.

Note: Ensure to maintain temperature records for all refrigeration units on a daily basis.
