Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food was thawing under warm water and the food temperature measured at 33C.
Corrective Action(s): Do not thaw food under warm water. Frozen food must be thawed under cold running water or inside a function cooler. Aforementioned foods were discarded.

206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): 2 inserts of chicken wings stored in the island hot holding unit measured with an internal temperature of 44-46C. All other inserts in the same unit measured at above 60C.
Corrective Action(s): Staff to reheat the aforementioned chicken wings to at least 74C then hot hold them at least 60C. Hot food must be hot held at 60C or above.

Observation (CORRECTED DURING INSPECTION): Stains and mildew noted on the interior of the ice machine located behind the cash register.
Corrective Action(s): Clean and sanitize the aforementioned ice machine. Discard the current batch of ice and the first batch after sanitizing. Follow your sanitation plan for regular cleaning schedule.

Observation (CORRECTED DURING INSPECTION): High temperature dishwasher registered 64C, 64C and 68C after three runs. It was noted during the rinse cycle machine indicated a temperature of 118F on the digital display.
Corrective Action(s): Staff set up manual dishwashing at the 3 compartment sink with 200 ppm quats sanitizer. Facility may wash and rinse with the dishwasher but must manually sanitize all utensils and plates.
