Health permit posted visibly. Hand sinks provided with liquid soap and paper towels. Sanitizer quats available. Provide test strips to ensure concentration is at 200 ppm. Upright cooler and prep line cooler was at or below 4 deg C. High temp dishwasher reached 78 deg C at plate surface. Temperature log was available and up to date. Note: Retractable gate installed in the fudge shop. Hooks installed for caps and hair nets available. General sanitation was ok. Flooring in the back requires attention. Nuts cart outside of the fudge shop was clean. **Discussed portable hand sink with manager.
