Observation (CORRECTED DURING INSPECTION): Some minor amounts of food stored out of cooler units during inspection:
- Shrimp
- Bucket of tofu
- Pooled eggs
CORRECTED DURING INSPECTION - items relocated to cooler units as all food items were in the range of 4-10 degrees Celsius

NOTE: Cooked meat, raw eggs were all stored in cooler unit as discussed during multiple past inspections - EXCELLENT WORK! - Food handling and storage practices have improved dramatically at facility!!

Corrective Action(s): Ensure staff are storing potentially hazardous food items in cooler unit. This includes tofu.

1) Knives stored in cracks between equipment and walls
2) Containers storing utensils require cleaning as food debris has accumulated
3) Tools stored under counter amongst grill brushes

Corrective Action(s): 1) Knives are to be stored on clean knife racks or in clean containers
2) Containers require routine cleaning
3) Tools need to be relocated from food preparation area. Find more suitable location for tools that is not amongst food or in food preparation area.

Observation (CORRECTED DURING INSPECTION): Staff washroom sink and main kitchen handsink lacking paper towels. CORRECTED DURING INSPECTION - these items were replaced during inspection.

Corrective Action(s): Ensure all handsinks are adequately supplied with liquid soap, paper towels and both hot and cold running water.

Observation: Multiple Violations:
1) Three pairs of shoes found on shelves throughout. (dishwashing area shelf, dry storage room)
2) Ice scoop in bar area stored directly into ice. CORRECTED DURING INSPECTION
3) Ginger being peeled in front restaurant tables

Corrective Action(s): 1) Relocate shoes. Shoe storage should occur in an area without food or equipment (such as a washroom)
2) Ice is a ready to eat food item. All scoops need to be stored on/in clean containers and not directly in the ice as the handles can become contaminated by dirty hands which can contaminate the ice if buried in ice.
3) Food preparation is only to occur in designated food preparation areas. Ensure staff are handling food only in appropriate areas.

Observation: Large quantity of fruit flies observed in washroom and dry storage room.

Corrective Action(s): Discuss fruit fly infestation with both Pest Control companies currently servicing restaurant. Discuss treatment options and prevention methods.

Observation: Multiple Violations:
1) Back door screen no longer closes due to addition of table to area.
2) Food from previous night was left in dishwashing area
3) Floors require cleaning.
4) Mop stored in bucket of water

Corrective Action(s): 1) Repair back door screen immediately
2) discuss with staff the cleaning of all dishes from previous night prior to leaving for the night
3) Clean floors nightly including under equipment and in corners
4) Do not leave standing water with fruit fly infestation. Hang mops to dry overnight and fully empty out mop buckets.

- Equipment

- Organize and clean rice storage area

- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Dishwasher achieving final sanitizing rinse of greater than or equal to 72 (75.7) Degrees Celsius at the dish
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm Chlorine
- Proper thawing techniques observed
- Ice machine and scoops in good sanitary condition
- Raw meat stored away from Ready to Eat food items
- Receipts available for inspection
- Light covers in place
- Cooler handles and seals in good sanitary condition
