Hand wash stations provided with liquid soap and paper towels.
Sanitizer (quats) solution measured 200 ppm in buckets and spray bottles.
Prep line coolers registered at or below 4 deg C.
Line freezer was at -18 deg C.
Hot holding for soup, gravy, rice was above 60 deg C.
Walk-in cooler was at 1-3 deg C.
Walk-in freezer was below -18 deg C.
Temperature log was available and up to date.
Low temp dishwasher had 100 ppm chlorine residual on the plate surface.
All food items were stored off the floor. Foods in the walk-in cooler were covered, dated and labelled.
No signs of pests noted. Pest control monitoring is implemented.
General sanitation in the kitchen was satisfactory. However, ceiling tiles around the vents over the dishwashing area have some dirt/debris accumulation. Ensure that these ceiling tiles are also cleaned on a regular basis. Flooring in the room where the walk-in cooler is located requires attention (skid marks and grime on the floor).
Note: Hand delivered health permit at time of inspection.
Bar area - hand wash station provided with liquid soap and paper towels.
Line cooler was at or below 4 deg C.
Ice scoop stored in a sanitary manner.
Glass ware washer had 12.5 ppm Iodine residual.
Test strips available for glass ware washer, dishwasher and sanitizer.
