Observation: No bleach detected in sanitizing solution with wiping cloths. It was stated by the operator that bleach had just run out and a cleaning product is being used in lieu of bleach/sanitizer.
Corrective Action(s): Ensure that an approved food contact surface sanitizer is available for use on site. Chemical cleaners may potentially contaminate food and may allow for the survival of potential pathogens on surfaces. Ensure all food contact surfaces are properly sanitized. Operator to obtain bleach prior to opening tomorrow. Note: Inspection conducted near closing time. Date to be corrected by: May 4, 2018.

Routine inspection conducted:

- Prep cooler at 5-6 degrees C (above) and 3 degrees C (below). It was stated that prep cooler inserts were recently removed for cleaning. Prep cooler lid was covered at time of inspection.
- Dessert cooler at 4 degrees C
- Reach in cooler at 4 degrees C
- Reach in freezer at -22 degrees C or less.
- Thermometers available for coolers
- No hot holding at time of inspection
- High temperature dishwasher measured 73 degrees C at utensil surface during final rinse (minimum 71 degrees C)
- Hand washing station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- No evidence of pest activity noted

Note: Since previous inspection:
- Food is protected from potential contamination. Dry storage products are stored in covered containers.
- Magnetic knife strip is in use
Please note that food storage temperatures should be monitored so that corrective action can be taken if needed. Please keep temperature log up-to-date.
