302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Dried on food soil and debris noted on the meat slicer. As per operator, the meat slicer was used yesterday.
Corrective Action(s): Disassemble the meat slicer and clean and sanitize all parts of the meat slicer. Everytime the meat slicer is used, it must be immediately washed, rinsed and sanitized to avoid bacterial growth. There has been known Listeria monocytogenes outbreaks associated with uncleaned meat slicer, it is therefore important for the operator to maintain the cleanliness of this equipment.

Observation: No paper towels and liquid soap noted in most handwash stations during the inspection.
Corrective Action(s): One of the handwash stations had the paper towel dispenser refilled during the inspection. Operator must ensure that all handwash station, including the staff washroom, are all stocked with liquid soap and paper towel at all time to ensure food handlers can practice proper handwashing when required.

Observation: Debris and dried on food soil noted on the following areas:
- Floor and wall in the walk-in cooler
- Wall by the reach-in cooler beside the upright freezer
Corrective Action(s): Clean and sanitize the aforementioned areas and maintain in a santary condition at all time.

Routine inspection conducted today:
All refrigeration units were at 4C or below.
All freezer units were at -18C or below.
All food in general were stored protected, organized, off the floor and in the proper storage hierarchy.
Hot hold unit was holding a few slices of pizzas and were noted at around 40C. As per operator, after the lunch rush (within 4 hours), all pizzas in the hot hold unit are discarded.
200 PPM chlorine residual detected in the bleach sanitizer spray bottle - ensure to use it on food contact equipment and surfaces during food preparation.
Drain plugs available for the 3-compartment sink - remember to always use the 3-compartment sink to wash, rinse and sanitize all utensils and equipment.
Did not observe dispensers stored within bulk food containers - excellent.
No signs of pest activities noted during the inspection.
