Observation: Grilled chicken in warmer observed to be at 40°C at time of inspection. Product was in bottom-left slot. Staff informed inspector the warming unit was known to not be working properly, and was unsure when the product was placed in warmer.
Corrective Action(s): Discard product and repair/replace unit immediately. In the meantime, use alternate slot to keep future products warm. Check regularly to ensure unit is holding product temperatures at 60°C or greater

Observation (CORRECTED DURING INSPECTION): Handwash station in ice cream area not equipped with paper towel at start of inspection.

- Corrected during inspection; Staff replaced towel during inspection. Please regularly check all hand wash stations to ensure they are properly equipped with liquid hand soap and paper towels at all times.

Observation: 1. Vanilla icing for cake decoration observed open and stored on floor at room temperature. Product measured to be -3°C at time of inspection.

- Corrected during inspection; product placed on plastic cart. Please educate staff to:
a. never store products on the floor
b. always keep product covered when not in use
c. if product is perishable, store product in appropriate environment (e.g. cooler/freezer) when called away to perform another task

2. Opened packets of sauces observed in walk-in cooler in uncovered metal cambro.
Corrective Action(s): 2. Always cover opened food when in storage.

2. Cutting board surface of sandwich prep cooler heavily scored and discoloured.
Corrective Action(s): 1. Immediately schedule deep clean is necessary for areas around, under, and behind large appliances and shelving (cake decorating area and walk-in cooler/freezer).
2. Replace/resurface cutting board immediately

Observation: 1. 6-slot warming unit not properly working; bottom left slot (grilled chicken) observed to be holding at 40°C
2. cutting board surface of sandwich prep cooler is discoloured, heavily scored and is not possible to properly clean / sanitize.
Corrective Action(s): 1. have technician look into repairing/replacing unit; in meantime, do not use bottom left slot unless it can hold products at 60°C
2. resurface/replace cutting board; board cannot be flipped due to manufacturer 'indents' meant to hold board in place

- Recommended to order extra bottles in case:
a. situations where more bottles become necessary (e.g. large-scale cleaning)
b. existing spray bottle is damaged/breaks
