Observation (CORRECTED DURING INSPECTION): Potentially hazardous foods (sausage, egg whites, milk) stored above 4 C.
Internal temperature of egg whites at 11 C.
Cooler had an ambient air temperature of 15 C.
Corrective Action(s): Potentially hazardous foods were discarded. Do not use this cooler for potentially hazardous foods until it is serviced.

Observation: Low temperature dishwasher registered 0 ppm for chlorine.
Correction: Service dishwasher so it is registering at least 50 ppm chlorine during the final rinse. In the interim, the smaller dishwasher (normally used for glasses) may be used for warewashing.
Correct immediately.

Observation: Walk-in cooler ambient air temperature at 6 C. Cooked asparagus and ravioli registered at 6 C.
Correction: Adjust cooler so it is able to maintain a temperature of 4 C or below at all times. Correct immediately.
