Observation: A lot of frost build-up in the Franke freezer with top sliding door, opened containers of frozen semi-cooked patties found and bags of food were placed on top of patties, the sliding door had food debris found that could potentially fall back into the containers.
Corrective Action(s): Remove all food into another freezer and provide lids for the containers. Defrost the freezer.
Correction date: 1 month.

General Comments:
-General sanitation satisfactory.
-Temperatures:
All coolers at 4C or below.
Walk-in cooler 4C
Walk-in freezer -20C
Freezers between -12C to -15C.
Ice cream creamer at 3C
-Door to freezer was left open. *Ensure to leave freezer's door closed after use.
-At least one staff had Food Safe Level 1 equivalent (Servsafe exp 2021)
-Hold held foods:
beef 72C
fish 68C
-Back door closed.
-No evidence of pests noted. Pest control reports provided. Feb and Apr reports indicated no evidence of pests in interior.
-Surface sanitizers at 200ppm Quats (dispenser), multiple buckets of quats sanitizers were available at 200ppm quats.

Corrections required from previous inspections were completed.
-Metal shelving unit was provided instead of yellow crates.
-Green air drying rack above sink were secured (**still felt sticky, discussed with staff that it must be scrubbed and degreased during cleaning, washed, and rinsed)

*Container of mayonnaise left at room temperature with no time stamp. Manager did not provide food safety plan to indicate that this item can be at room temperature. Until it is confirmed that having this out at room temperature is approved, must have mayonnaise in refrigerator at 4C or below. The original package says refrigerate after opening.
