Observation: Some food in walk in and reach in coolers at 43F (about 5-6 C) depending on where stored in cooler.

Observation: Walk in cooler - temperature of air at the back leaving fan was 40 F (4 C). This is the maximum temperature for food storage. Poor air circulation and opening of door is resulting in some food being stored at >4C. Reach in cooler - food at top shelf is at 40 F (4 C) but temperature at bottom of shelves is >4C possibly due to poor air flow.
Corrective Action(s): Adjust, service, clean, or repair both the walk in and reach in coolers. Ensure good air flow. These coolers must be able to keep potentially hazardous foods at 4 C / 40 F or colder. Keep doors closed as much as possible. Recommend plastic strips in walk in or other method to keep cold air in. Keep temperature records at least 3 times per day and use an accurate indicating thermometer. Provide new accurate indicating thermometers in both coolers to check temperatures on different shelves. Reviewed quick cooling of hot foods before putting them in walk in.

Observation: Walk in cooler - food temperature is above 4 C /40 F (temperature of food items at 44F). Air temperature is higher.
2 door upright cooler - air and food temperature slightly above 40F - adjusted during inspection.
Correction: Keep door closed as much as possible and monitor air temperature. Potentially hazardous foods must be kept at 4 C/40 F or colder. If temperature of walk in does not go down, move food to the alternate cooler and only use the walk in for lower risk foods such as vegetables.

Follow up inspection.
Walk in cooler - thermometer under fan at back of walk in was left overnight and air temperature minimum reached 0.9C. Today, air temperature at fan is 4C/40 F. Food temperature however is 43F (soup). See above.
2 door reach in cooler - temperature of food on top shelf is 40F and some reaches 43F. See above.
