Observation (CORRECTED DURING INSPECTION): A large container of tapioca in the Walk-in cooler -internal temperature at 30 deg C

Corrective Action(s): You must cool foods FAST. Do not place hot foods in the fridge until below 20 deg C otherwise the whole fridge will warm up:

Proper cooling involves:
Step 1: 60 deg C to 20 deg C within 2 hours -ice baths/ice wands/wide shallow pans assist
Step 2: 20 deg C to 4 deg C within 4 hours -place in the fridge

Operator placed the tapioca container in an ice bath -OK

Corrective Action(s): -Place the scoopers lodged in the food handle up otherwise place outside in a clean washable container

-Once bulk food bags are opened place in rodent proof containers

The window ledge is not a regularly cleaned and sanitized area -dishwash the knives.
Store knives/utensils in a sanitary location such as in clean washable containers, knife holders/magnetic wall strips
