Observation:
1) Low temperature chemical dishwasher sanitizing cycle measured at 0 ppm. Dishwasher sanitizer bottle was empty, no refill of sanitizer available on site.
2) No food contact surface sanitizer available. Unapproved domestic disinfectant spray being used.
Corrective Action(s):
1) Discontinue use of dishwasher until new dishwasher sanitizer solution is obtained. In the meantime, use 3 compartment sink for manual dishwashing and rewash all utensils/equipments/tools before use.
The following steps must be done for manual dishwasing:
1. Wash with soap
2. Rinse
3. Sanitize
4. Air Dry

Operator purchased chlorine bleach during inspection. Operator was instructed on how to create a chlorine bleach sanitizing solution, 1 teaspoon bleach for 1 L of water. Spray bottle was properly labelled as "Sanitizer"

Observation (CORRECTED DURING INSPECTION): Containers of prepared vegetables in the stand up cooler were not properly covered
Corrective Action(s): Ensure all containers of food are properly covered to prevent contamination. Operator covered the food with food grade lids during the inspection.

Routine inspection conducted:
- Hand washing stations equipped with hot/cold running water, liquid soap and paper towels
- Cooling units at 4C or below
- Food inserts at the cooking line at 4C or below
- Freezer unit at -17C
- Rice hot held at 83 C
- 3 compartment sinks available
- No pest activity observed at the time of inspection. Ongoing pest control contract, last visited on Feb 16, 2021.
- Permit located in a visible spot
- FOODSAFE Level 1 certified operator on site
