Observation: During time of inspection Quats sanitizer registered at 150ppm. in red sanitizer buckets. No quats sanitizer registered in "Sanitize" compartment of 3 compartment sink.
Corrective Action(s): Ensure Quats sanitizer at concentration of 200ppm, and changed frequently as per manufactures instructions. Ensure staff are using test strips to verify concentration of sanitizer. follow proper dish washing procedures. Date to be corrected by May 24th.

Comments

All handwash sinks equipped with hot/cold running water, paper towel, liquid soap16 machines kept in clean sanitary manner. Scoop stored properly.
All under counter coolers at or below 4C.
Under counter freezers in grill area between -16 - 17C.
Drawer freezer for hamburger patties -20C.
Sandwich station insert's at 2.4C.
Walkin cooler at 3.9C.
Walkin freezer attached to cooler at 113C.
Note: Please ensure all freezers able to maintain temperature of -18C or below at all times.
Walk in freezer for cake storage -32.4C.
3 compartment sink available for use in back & front of kitchen.
Note: 3 compartment sink in back of kitchen appears to be leaking please repair leak.
Note: In back dishwashing area several plastic containers appear to be melted. Do not use damaged plastic containers for food storage. Ensure any warming/microwaving of food is done in appropriate containers.
Overall sanitation satisfactory. However please focus cleaning efforts to hard to reach areas and underneath/behind equipment store personal items in designated space/lockers not on food storage area.
