Observation: Double compartment sink behind the coffee bar is being used for utensil cleaning.
Corrective Action(s): The double sink behind the coffee bar is to be used for food prep and one sink is to be designated for hand washing. This sink is to be accessible at all times. Clean and sanitize all utensils and dishes in the main dishwasher. Do not store dirty dishes in this sink. Keep hand sink area accessible for staff to easily wash hands. **A small, designated hand washing sink located closer to the coffee bar area is highly recommended.

Observation (CORRECTED DURING INSPECTION): Food staff hand sinks in coffee roasting and main bakery areas do not have paper towels. The sink behind the coffee bar area is not easily accessible (carts etc. in way).
Corrective Action(s): Paper towels provided during inspection. Keep paper towels in dispensers at all hand sinks. A designated hand washing sink for the coffee bar staff is to be easily accessible at all times (recommend a new hand sink closer to coffee bar).

Comments

Routine check:
Coolers (walk in, coffee bar prep cooler, upright 2 door cooler) are all at 4 C/40 F or colder.
**Blueberry custard pastry - store in fridge. This has a cream cheese filling and is a PHF requiring refrigeration as per your food safety plan (2 hours max at room temperature).
Hot holding - soup temperature is >60C/140 F.
Reheating - macaroni reheated to order - ok.
Keep temperature records.
Produce is washed on site in prep sink or is pre-washed.
Deli meats - keep best before dates/be able to provide ingredient information.
Hand washing - liquid soap provided at all hand sinks. Paper towels are at the double sink hand sink but not at other 2 hand sinks - see above.
Disposable plastic gloves are used also.
Use of double sink for utensil cleaning - see above.
**Food storage - do not store food in cans once cans have been opened (pumpkin). Store in food grade container after opening.
Supervisor on site states has FoodSafe Level 1 certification - keep copies of certificates on site.
Chlorine sanitizer 100ppm + used to sanitize wiping cloths.
Commercial dishwasher -has a final hot water sanitizing rinse of >82C/ 180F (with 71C/160F measured inside of the machine) - good. See above regarding water leak.
**All dishes, pots and utensils to be washed and sanitized in the dishwasher unless it is Clean in Place equipment.
Ceiling above main food preparation area - as mentioned previously, replacement tiles for this ceiling to be washable (impervious to moisture).
Recommend monitoring for pests. No evidence of pests today.
