Comments

-Walk-in cooler was at 4C.
-Pizza prep cooler was at 4C (top and bottom).
-Upright freezer was at -18C.
-Chest freezer was at -17C.
-Front hot holding of pizza was greater than 60C.
-Thermometers present in refrigeration units.
-Cooked chicken is cooled in shallow layers and was probed at less than 4C.
-Cleaning and sanitizing carried out in the 3-compartment sink. Sanitizer was tested at 100ppm.
-Both handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach spray bottle labelled and tested at 100ppm.
-Deli slicer was properly disassembled for cleaning and sanitizing.
-General food storage practices good at the time of inspection. Foods properly stored off the floor, covered, and protected from contamination.
-General sanitation good at the time of inspection. Additional attention required for the shelving units in the walk-in cooler (minor mould growth).
-No pests noted at the time of inspection.
-Washroom clean and well maintained.
