Observation: No written records present for checking cooler/freezer temperatures. Checking and recording cooler and freezer temperatures daily ensures that malfunctioning equipment can be caught and fixed promptly, and that potentially hazardous foods can be either discarded (if potentially hazardous foods at 4 degrees celsius for MORE THAN 2 hours) or moved to a working cooler (if potentially hazardous foods at 4 degrees Celsius+ for LESS THAN 2 hours). Coolers operating above 4 degrees Celsius will allow the growth of pathogens in potentially hazardous foods e.g. sprouts, dairy products, proteins, cut vegetables and this must be prevented.
