302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1. Facility has started mixing their own Mr. Clean product with a small amount of bleach to use as a sanitizer for food contact surfaces.
2. High temperature dish machine was not functioning at the time of inspection.
Corrective Action(s): **Issue corrected at the start of inspection - for violation #1**
1. Do not mix different chemicals together as chemicals may be non-compatible and can produce toxic byproducts that could be hazardous. Instructed staff to mix bleach and water to use as a chlorine sanitizer instead. 200 ppm chlorine residual detected from the new sanitizer.
2. Facility only has a 2-compartment sink which is filled with items at the time of inspection. Due to the volume of business, facility is to close until the high temperature dish machine is fixed, capable of reaching 71C at the plate level, before they can reopen. Closure order issued.

Observation (CORRECTED DURING INSPECTION): Missing liquid soap and paper towel in the dispenser by the bar handwash sink.
Corrective Action(s): **Issue corrected at the time of inspection** Paper towel and liquid soap were placed by the bar handwash sink.
All handwash stations must always be accessible and stocked with paper towel and liquid soap especially when food preparation is happening. This allows food handlers to perform proper handwashing when required.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Grease buildup noted on the fume hood. Note: Fume hood due for professional cleaning at the end of October 2022.
2. Dried mouse droppings noted in the cabinet below the bar handwash sink.
Corrective Action(s): 1. Clean the fume hood to avoid grease from dripping into the food below. This may lead to potential food contamination and possible fire hazard.
2. Sweep, clean and sanitize the cabinet noted with the droppings in order to allow for monitoring of potential pest issues. Mouse droppings were not noted anywhere else in the facility.

Observation: High temperature dish machine was not capable of running at the time of inspection.
Corrective Action(s): Correction order issue. Fix the dish machine so that it is able to reach 71C at the rinse level.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: 1. New refrigerator installed near the back door. No updated floor plan has been sent to Fraser Health for approval prior to the installation of this equipment.
2. As per staff, renovation were recently being done at the facility. Noted 2-compartment sink in the kitchen area is not installed flushed to the wall.
Corrective Action(s): 1. Update the current floor plan to reflect the actual current layout of the facility and submit to the area Health Inspector.
Whenever a change to the existing layout is planned, please submit an updated floor plan for approval prior to making any changes.
2. 2-compartment sink must be installed flushed to the wall and caulked to the wall to prevent water from seeping behind the wall to cause damage and potential water pooling to allow for the breeding of pests, such as flies.

Routine inspection conducted today:
All refrigeration units were at ≤ 4C.
Freezer unit was at ≤ -18C.
General cleanliness noted improved, however fume hood still require minor cleaning (see violation #306).
Proper scoops, with handles, were used in bulk food containers. All food products were stored protected.
Fruit flies still noted on the wall by the dishwashing area - however situation has been improved. Keep maintaining the cleanliness of the area and working along with the external Pest Control Company to control the situation.
Closure order issued at the time of inspection. High temperature dishmachine was noted broken and unable to operate at the time of inspection.
