Comments

The operator on site claimed that the front storage cooler (it is the back holding at front line equipment) is fluctuated during the day (especially at busy time).
The only temperature log available - 10.09.2019 (10 am & 6 pm) - the temperature of the cooler at 10 am at 39; and for 6 pm at 38.
The temperature of the cavity of the cooler at 10.3 C (time at 1: 35 pm); in the food at 7.3 C (which in the cooler from the morning at).
The cooler must be able to keep up with a busy time. Temperature of the cooler must be 4.0 C or below.
Note: Correction Order and Violation Ticket might be issued next time.
The thermometer in the cooler is available and it at 10.9 C.

Immediately. The temperature log (new page) must be available (today is Thru, Sep. 12, 2019) especially with the cooler issue.
Violation code will remain from the routine inspection.
