Observation: Two freezers in pizza prep area in need ot corrections:
1)Chest freezer in need of replacement as the entire top cover has come apart from the door handle portion.
2) Upright freezer has significant ice buildup on each of the racks
Corrective Action(s): 1) Operator has indicated he plans to replace both freezers.
2) If chest freezer is not replaced by the next routine inspection, further enforcement actions may occur. Defrost upright freezer if it does not get replaced within the next 2 weeks.

Handsink equipped with liquid soap, paper towels, hot/cold running water
**Ensure that paper towels are placed beside the sink at all times. Operator has indicated he will be installing new paper towel dispenser
All temperatures satisfactory:
Pizza prep cooler: Inserts at 4 deg C, bottom compartment at 3 deg C
Glass door upright cooler with metal pizza pans: 2 deg C
Walk in cooler at 3 deg C
Pizza hot holding unit: 62 degC
Pop cooler: 3.8 deg C
General sanitation ok, but there is a non-working upright cooler that has lots of boxes stored in it. Operator has indicated he plans to remove this non-functional cooler and all the boxes. Ensure to keep your kitchen area organized
No signs of pests at time of inspection
2 coolers currently not plugged in and not in use, operator has indicated they will be used for proposed sandwich menu additions. See note below.

Note: Discussed proposed rennovations with operator for being able to make sandwiches. Operator will be submitting an updated floor plan on the rennovations for review and approval. Operator proposes to add an additional prep sink and handwash sink in the sandwich making area, as well as having 2 coolers for sandwiches and ingredients. Discussed with operator that the City may have additional requirements with regards to a grease trap, etc. Along with the floor plan, please ensure to submit a food safety plan and sanitation plan for the proposed sandwich menu items.
